The rule
Spokane County Code 8.03.5080.C requires each food service establishment to keep records of grease control device cleaning on the premises for three years, showing the date and time of service, the volume of material removed, and the hauler or person who performed it. The county may inspect them.
What ours carries
- Date and time, device and size
- Volume removed, in gallons, and “pumped dry” confirmed
- Hauler name and operator
- Percent-full reading before service — the evidence your interval is right, and the evidence for an 8.03.5080.E exception if you want one
- Condition of baffles, tees, lids, sample box
The folder
Service records in date order; a page of notes for anything unusual; your used-oil pickup tickets alongside. An inspector asks, you hand over the folder.
